Recipes you’ll love to cook in your American Legend home

French Toast Roll-ups 

This tasty breakfast from www.thebakermama.com is a creative, decadent treat that you can enjoy any day of the week. 

Ingredients:

  • 3 tablespoons unsalted butter, melted
  • 3 tablespoons granulated sugar
  • 2 tablespoons brown sugar
  • 1 tablespoon ground cinnamon
  • 2 large eggs
  • 1/4 cup milk
  • 2 tablespoons granulated sugar
  • 2 teaspoons ground cinnamon
  • 8 slices soft white bread, crusts cut off
  • 3 tablespoons butter, for sauté pan
  • maple syrup, for serving

Instructions

  • In a small microwave-safe bowl, melt 3 tablespoons butter until just melted. With a fork, stir in 3 tablespoons granulated sugar, 2 tablespoons brown sugar and 1 tablespoon cinnamon until a smooth spreadable mixture forms. Set aside.
  • In a shallow bowl, whisk together the eggs and milk. Set aside.
  • In another small bowl, stir together 2 tablespoons granulated sugar with 2 teaspoons cinnamon. Set aside.
  • After trimming the crusts from each slice of bread, roll one slice out to about 1/8-inch thickness with a rolling pin. Spread each slice with a thin layer of the butter mixture and roll up tightly. Repeat with remaining bread slices and butter mixture.
  • Place 3 tablespoons butter in a large non-stick sauté pan and let melt over medium heat. (If using a small sauté pan, use just 2 tablespoons butter and sauté the roll-ups in two batches) Dip one roll at a time in the egg mixture and place in the sauté pan. Allow roll ups to sauté for 1-2 minutes per side until golden brown and slightly crisp on the outside. Remove to a work surface and sprinkle each roll up generously with the cinnamon-sugar mixture.
  • Serve immediately with maple syrup.

One-pot Chicken Noodle Soup

This savory and delicious chicken noodle soup recipe from www.onepotrecipes.com is the perfect lunch that you can prepare in a pinch and enjoy during the chilly winter afternoons. 

Ingredients:

  • 2 tbsp butter – unsalted 
  • 1 cup carrots – washed, peeled and sliced 
  • 1 cup celery – thinly sliced
  • 3/4 cup onions – finely chopped
  • 1 tbsp ginger – finely chopped
  • 1 tbsp garlic – finely chopped
  • 7.5 cups low-sodium chicken broth
  • 1/2 tsp thyme – dried 
  • 1/2 tsp oregano – dried 
  • 1 bay leaf
  • Salt to taste
  • Pepper to taste
  • 12 oz egg noodles – uncooked 
  • 1.5 cups chicken – shredded or cut into cubes/thin slices
  • 2 tbsp parsley – fresh, finely chopped
  • 1 tbsp parsley, green onions or thyme – fresh, for garnish

Instructions:

  • In a large stockpot, heat butter on medium high heat.
  • Add carrots, celery, onions and sauté everything until the veggies become slightly tender.
  • Add ginger, garlic and sauté them for 1-2 minutes, making sure not to burn them.
  • Add broth, thyme, oregano, bay leaf, salt, pepper and bring everything to a boil.
  • Let it cook for another 5 minutes.
  • Add egg noodles and let it all cook for about 10 minutes or until the noodles become soft.
  • Note: If you like more broth in your soup, you can add some more water or broth and cook for an additional 4-5 minutes.
  • Add chicken and parsley and cook for another 3 minutes.
  • Check the flavor to see if you need to add morel herbs or spices and add accordingly. 
  • Discard the bay leaf and garnish with some fresh parsley, thyme or green onions and enjoy!

Taco Stuffed Bell Peppers

This recipe for taco-stuffed bell peppers from www.seekinggoodeats.com is an easy-to-make, healthy recipe that everyone will love. Plus, it’s keto and gluten-free!

Ingredients:

  • 4 medium green peppers – halved 
  • 1.5 lb ground beef – browned 
  • 1 packet taco seasoning mix, or seeking good eats homemade taco seasoning recipe
  • 3/4 cup water
  • 1-1/2 cup cheddar cheese
  • 1 cup sour cream
  • 1/2 cup salsa

Instructions:

  • Preheat oven to 350° F. Wash peppers then slice lengthwise in half through the middle and remove seeds. Place in a casserole dish with 1/4 cups water. Cover and microwave 7 to 10 minutes, or until peppers are soft. Check periodically for doneness.
  • In the meantime, brown the ground beef until cooked through. Add the taco seasoning and water and cook according to recipe or packet instructions. After the meat is cooked, mix in sour cream, salsa, and 1 cup of the cheddar cheese.
  • Spray a 13 x 9 baking dish with nonstick spray. Place cooked peppers inside dish and generously stuff with meat and cheese mixture. Top with remaining cheese. Bake 350 ° F for 20-30 minutes until peppers are heated through and cheese is melted. Serve with your favorite taco ingredients and a side of salsa. Enjoy!
